1 box of fusilli pasta (Cassava Kitchen)
2 cucumbers or 1 large cucumber
1 cup cherry tomatoes
1 cup of spinach & arugula
LEMON BASIL DRESSING
1 cup basil
3 garlic gloves
Zest from 1 lemon
2 tbsp of lemon juice
1/2 tsp of salt (add more for preference)
1/2 tsp of pepper
Optional: Add shaved pecorino. Switch out spinach or arugula for other veggies you prefer. If you don't want the dressing to be too garlicy, just do 2 large ones.
Directions:
1. In a pulser, add the basil, garlic, and lemon zest and pulse till chopped. Then add your olive oil, lemon juice, salt and pepper and pulse till it's all combined.
2. Meanwhile, cook your pasta 6-8 mins.
3. Once pasta is cooked, add your spinach and arugula with the pasta. Mix then add your tomatoes, cucumbers, and dressing and mix well.
4. Finish it off with some shaved pecorino or parmesan (up to you!) and dig in!
