INGREDIENTS
- Cassava Flour 100 gram
- Coconut Milk 200 ml
- Salt ¼ tsp
- Egg whole 2 pcs
- Water 200 ml
- Pandan Leaf 2 pcs
Fillings :
- Desiccated Coconut 250 gram
- Palm Sugar 150 gram
- Salt ¼ tsp
- Water 100 ml
- Whipped Cream
- Jackfruit
INSTRUCTIONS
- In the large bowl, add the egg, cassava flour, coconut milk, salt, water and pandan leaf, mix well.
- Heat a pan, coat with butter, pour 1 spoon of dough mixture in the pan. Shake the pan to prevent the pancake from sticking or use a pan with a non stick coating.
- Repeat until the dough finish.
Instructions Fillings :
- Boil the palm sugar, water, salt until combined and thick
- Add the desiccated coconut. Cooking until dry on low heat
- Cooling, set aside.
SERVE :
- Add the desiccated coconut filling to each pancake and roll it up.
- Alternatively, you can also use a combination is whipping cream and jackfruit to fill your pancake and roll it up.
