Gluten free Dadar Gulung - Traditional Indonesian Pancakes filled with shredded coconut

Prep: 10 Minutes I Cooking Time : 30 Minutes I Servings : 10 pcs 

 INGREDIENTS

  1. Cassava Flour             100 gram
  2. Coconut Milk                 200 ml
  3. Salt                                ¼ tsp
  4. Egg whole                     2 pcs
  5. Water                            200 ml
  6. Pandan Leaf                 2 pcs

Fillings :

  1. Desiccated Coconut            250 gram
  2. Palm Sugar                         150 gram
  3. Salt                                      ¼ tsp
  4. Water                                  100 ml
  5. Whipped Cream
  6. Jackfruit 

INSTRUCTIONS

  1.  In the large bowl, add the egg, cassava flour, coconut milk, salt, water and pandan leaf, mix well.
  2.  Heat a pan, coat with butter, pour 1 spoon of dough mixture in the pan. Shake the pan to prevent the pancake from sticking or use a pan with a non stick coating.
  3. Repeat until the dough finish.

Instructions Fillings :

  1.   Boil the palm sugar, water, salt until combined and thick
  2.   Add the desiccated coconut. Cooking until dry on low heat
  3.   Cooling, set aside.

SERVE :

  1. Add the desiccated coconut filling to each pancake and roll it up.
  2. Alternatively, you can also use a combination is whipping cream and jackfruit  to fill your pancake and roll it up.
  3. Enjoy!
