INSTRUCTIONS
PREP
- Boil the water and add ½ teaspoon oil
COOKING TIME
- Cook Penne Cassava pasta until al dente . Drain and rinse with cold water, and set aside.
- In a small bowl, beat the eggs add a pinch of pepper and salt
- Heat the vegetable oil, add the onion, garlic. Then add the vegetables pour the milk and cook for 2 minutes. Add the pasta, season with salt, pepper, stock and stir to combine.
- Heat the vegetable oil into a flat pan, place the ring cutter on the pan, first place the pasta in the ring and pour in the egg mixture on top. Cook for 2 minutes till the underside is brown. Carefully flip the pancake and cook about 3 minutes.
SPICY WHIPPED FETA
- Combine all the ingredients in food processor or mixer
SERVE :
- Put the pasta pancake on the plate add the spicy whipped feta on top
- Add some peanut crumble (optional) pour some parmesan cheese and lemon zest as desire
PRO TIP: To prevent sticking, shaking the pan 1-2 times before flipping can be helpful. Do not stack the pancake
