Pasta Pancake with Spicy Whipped Feta

*** Items needed: Baking ring cutter (6-12 inches)

INSTRUCTIONS
PREP

  1. Boil the water and add ½ teaspoon oil


COOKING TIME

  1.   Cook Penne Cassava pasta until al dente . Drain and rinse with cold water, and set aside.
  2.  In a small bowl, beat the eggs add a pinch of pepper and salt
  3.  Heat the vegetable oil, add the onion, garlic. Then add the vegetables pour the milk and cook for 2 minutes. Add the pasta, season with salt, pepper, stock and stir to combine.
  4. Heat the vegetable oil into a flat pan, place the ring cutter on the pan, first place the pasta in the ring and pour in the egg mixture on top. Cook for 2 minutes till the underside is brown. Carefully flip the pancake and cook about 3 minutes.

SPICY WHIPPED FETA

  1. Combine all the ingredients in food processor or mixer  

SERVE :

  1. Put the pasta pancake on the plate add the spicy whipped feta on top
  2. Add some peanut crumble (optional) pour some parmesan cheese and lemon zest as desire

PRO TIP: To prevent sticking, shaking the pan 1-2 times before flipping can be helpful. Do not stack the pancake
