Cassava Fusilli Pasta in Creamy Green Sauce (Gluten-Free)

  • 2 handful basil leaves
  • 1 1/2 handful parsley
  • 4 tbsp (mixed) nuts or seeds e.g. pine nuts, sesame seeds, pumpkin seeds, flax seeds etc. 
  • 1 clove of garlic, peeled
  • 2 tbsp. olive oil
  • 1/3 cup water
  • 250 ml soy/ oat cream (for cooking) 
  • 1 tbsp. lemon juice
  • 1/2 tbsp. dried oregano
  • 1/2 tbsp. dried basil
  • Salt and pepper

Directions:

  1. Add basil, parsley, nuts/seeds, 1 clove of garlic and water to a food processor
  2. Pulse until everything is finely chopped 
  3. Add olive oil and pulse again until everything is a smooth paste
  4. Add the green mixture to a sauce pan over medium heat along with all the other ingredients
  5. Stir well
  6. Cook until the sauce starts boiling, then turn down heat to low and let the sauce thicken for about 2-3 minutes
  7. Add salt and pepper for desired taste and serve with boiled pasta
