Asian Pasta Salad with Miso Dressing

1 box of fusilli pasta
16 oz bag of fresh coleslaw mix (no dressing)
1 red bell pepper, seeded and thinly sliced
1/2 cup edamame (pre-shelled)
1/4 cup thinly sliced green onion
1/4 cup chopped cilantro
1/4 cup peanuts 

Alternative: You can use toasted almonds and make your own dressing. We used a bottle of miso dressing

 

Directions:

1. Cook your pasta to the texture and firmness you prefer

2. If you bought frozen edamame, follow the directions to heat it up and let it cool 

3. Chop your pepper into small dice-like pieces

4. Roughly chop your cilantro and green onion 

5. In a large bowl, add the coleslaw and pasta and mix

6. Add your peppers, green onion, cilantro, and edamame 

7. Add your miso dressing and mix
